  • 1 cup zucchini, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  3. Add chicken breasts to the bowl and coat them well with the marinade.
  4. Place the chicken on a sheet pan and surround it with bell peppers, red onion, and zucchini.
  5. Drizzle remaining marinade over the vegetables.
  6. Bake for 25-30 minutes or until the chicken is cooked through.
