- 4 chicken thighs
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound mixed vegetables (carrots, broccoli, bell peppers)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix honey, Dijon mustard, olive oil, garlic powder, salt, and pepper.
- Coat the chicken thighs in the honey mustard mixture.
- Place the chicken on a sheet pan.
- Add mixed vegetables around the chicken.
- Drizzle remaining honey mustard mixture over the vegetables.
- Bake for 25-30 minutes until chicken is cooked through.
- Serve warm.
