Description

This dish features tender chicken and sweet pineapple roasted together with a flavorful teriyaki glaze.

  • 1 cup pineapple chunks, fresh or canned
  • 1/2 cup teriyaki sauce
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix teriyaki sauce, olive oil, garlic powder, ginger, salt, and pepper.
  3. Place chicken thighs on a sheet pan and pour the teriyaki mixture over them.
  4. Add pineapple, bell pepper, and onion to the pan.
  5. Toss everything to coat evenly.
  6. Bake for 25-30 minutes or until chicken is cooked through.
  7. Serve warm.
