Description

- 1 lb chicken thighs, boneless and skinless
- 1 cup pineapple chunks, fresh or canned
- 1/2 cup teriyaki sauce
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 teaspoon garlic powder
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix teriyaki sauce, olive oil, garlic powder, ginger, salt, and pepper.
- Place chicken thighs on a sheet pan and pour the teriyaki mixture over them.
- Add pineapple, bell pepper, and onion to the pan.
- Toss everything to coat evenly.
- Bake for 25-30 minutes or until chicken is cooked through.
- Serve warm.

- You can substitute chicken with tofu for a vegetarian option.
