- 2 cans shoepeg corn, drained
- 1 cup sour cream
- 1 cup cream of chicken soup
- 1 cup shredded cheddar cheese
- 1/2 cup melted butter
- 1 cup crushed Ritz crackers
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the corn, sour cream, cream of chicken soup, cheddar cheese, melted butter, salt, and pepper.
- Pour the mixture into a greased 9×13 inch baking dish.
- Top with crushed Ritz crackers.
- Bake for 30-35 minutes until bubbly and golden brown.
Notes
- Can substitute cream of chicken soup with cream of mushroom for a vegetarian option.
- For a spicier version, add diced jalapeños.
