Description
A hearty slow cooker chicken and sweet potato curry that is easy to prepare.

- 2 lbs chicken thighs, boneless and skinless
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can coconut milk (13.5 oz)
- 2 tbsp curry powder
- 1 tsp ground ginger
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup chicken broth
- 1 cup peas, frozen
- 2 tbsp cilantro, chopped (for garnish)
Instructions
- Place chicken thighs in the slow cooker.
- Add sweet potatoes, onion, and garlic.
- In a bowl, mix coconut milk, curry powder, ginger, salt, pepper, and chicken broth.
- Pour the mixture over the chicken and vegetables.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Stir in frozen peas for the last 30 minutes of cooking.
- Garnish with cilantro before serving.
Notes
- Adjust the spice level to your preference.
- Serve with rice or naan for a complete meal.
- This dish can be refrigerated for up to 3 days.
