A hearty slow cooker chicken and sweet potato curry that is easy to prepare.


Ingrédients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can coconut milk (13.5 oz)
  • 2 tbsp curry powder
  • 1 tsp ground ginger
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chicken broth
  • 1 cup peas, frozen
  • 2 tbsp cilantro, chopped (for garnish)

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Add sweet potatoes, onion, and garlic.
  3. In a bowl, mix coconut milk, curry powder, ginger, salt, pepper, and chicken broth.
  4. Pour the mixture over the chicken and vegetables.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  6. Stir in frozen peas for the last 30 minutes of cooking.
  7. Garnish with cilantro before serving.
