Instructions
- Prepare all vegetables by dicing them into small pieces.
- Place the diced potatoes, carrots, celery, and onion into the slow cooker.
- Add the vegetable broth, garlic powder, thyme, salt, and pepper.
- Stir the ingredients to combine well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir before serving and adjust seasoning if necessary.
Notes
- Feel free to add other vegetables like green beans or corn.
- For a creamier texture, add 1 cup of cream cheese during the last hour of cooking.
- Leftovers can be stored in the refrigerator for up to 3 days.
