Instructions

  1. Slice the green tomatoes and set aside.
  2. In a bowl, mix cornmeal, smoked paprika, salt, and black pepper.
  3. Dip each tomato slice in buttermilk, then coat with the cornmeal mixture.
  4. Heat oil in a skillet over medium heat.
  5. Fry tomato slices until golden brown, about 3-4 minutes per side.
  6. In a separate bowl, combine diced tomatoes, onion, cilantro, and lime juice for salsa.
  7. Serve fried tomatoes hot with fresh salsa on top.
