Description
A refreshing soba noodle salad with vegetables and a light dressing.
Ingrédients

- 200g soba noodles
- 1 cup sliced cucumbers
- 1 bell pepper, thinly sliced
- 1 cup shredded carrots
- 1/4 cup green onions, chopped
- 1/4 cup sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 tablespoon sesame seeds
Instructions
- Cook soba noodles according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine cucumbers, bell pepper, carrots, and green onions.
- Add the cooled soba noodles to the vegetables.
- In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey.
- Pour the dressing over the salad and toss to combine.
- Sprinkle sesame seeds on top before serving.

- Serve chilled for best flavor.
