- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup green beans, chopped
- 1 cup corn, frozen or fresh
- 1 cup peas, frozen or fresh
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and cook for another minute.
- Add vegetable broth, diced tomatoes, oregano, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add green beans, corn, and peas. Cook for an additional 10 minutes.
- Taste and adjust seasoning if needed. Serve hot.

- Feel free to add any vegetables you like.
- This soup can be stored in the fridge for up to 5 days.
- It freezes well for later use.
