Description
A classic southern potato salad that brings comfort to any meal.
Ingrédients

- 5 medium potatoes, peeled and cubed
- 3/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 2 hard-boiled eggs, chopped
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender, about 15 minutes.
- Drain and let cool.
- In a large bowl, combine mayonnaise, mustard, vinegar, salt, and pepper.
- Add the cooled potatoes, onion, celery, and eggs to the bowl.
- Mix gently until well combined.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- Adjust seasoning to taste.
- Can add pickles for extra flavor.
- Keep refrigerated for up to 3 days.
