Description

A spatchcock turkey is a flat-roasted turkey that cooks evenly and quickly, perfect for Thanksgiving.

  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder

  • Fresh herbs (thyme, rosemary, sage) for garnish

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Place the turkey breast-side down on a cutting board.
  3. Using kitchen shears, cut along both sides of the backbone to remove it.
  4. Flip the turkey over and press down on the breastbone to flatten it.
  5. Rub olive oil over the turkey and season with salt, pepper, garlic powder, onion powder, and paprika.
  6. Place the turkey on a baking sheet, skin-side up.
  7. Roast in the oven for 1.5 to 2 hours, until the internal temperature reaches 165°F (74°C).
  8. Let it rest for 20 minutes before carving.
