Description
A spatchcock turkey is a flat-roasted turkey that cooks evenly and quickly, perfect for Thanksgiving.

- 1 whole turkey (12–14 lbs)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- Fresh herbs (thyme, rosemary, sage) for garnish
Instructions
- Preheat your oven to 450°F (232°C).
- Place the turkey breast-side down on a cutting board.
- Using kitchen shears, cut along both sides of the backbone to remove it.
- Flip the turkey over and press down on the breastbone to flatten it.
- Rub olive oil over the turkey and season with salt, pepper, garlic powder, onion powder, and paprika.
- Place the turkey on a baking sheet, skin-side up.
- Roast in the oven for 1.5 to 2 hours, until the internal temperature reaches 165°F (74°C).
- Let it rest for 20 minutes before carving.
