A flavorful and spicy chicken chipotle pasta dish.
Ingrédients

- 8 oz penne pasta
- 1 lb chicken breast, diced
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (10 oz) diced tomatoes with green chilies
- 2 tbsp chipotle sauce
- 1 cup heavy cream
- 1 cup shredded cheese
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add onion and garlic; sauté until onion is translucent.
- Add diced chicken, cooking until browned and cooked through.
- Stir in diced tomatoes and chipotle sauce; simmer for 5 minutes.
- Pour in heavy cream and stir until combined.
- Add cooked pasta and cheese; mix well until cheese melts.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
Notes
- Adjust the amount of chipotle sauce for desired spiciness.
- Use your choice of pasta for variation.
- Can substitute chicken with shrimp or tofu for a different protein.
