A flavorful and spicy red curry wonton soup that warms you up.
Ingrédients

- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon red curry paste
- 4 cups chicken broth
- 1 can coconut milk
- 1 pound wontons
- 1 red bell pepper, sliced
- 2 cups spinach
- 1 tablespoon fish sauce
- 1 lime, juiced
- Cilantro for garnish
Instructions
- Heat oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in red curry paste.
- Add chicken broth and coconut milk, bring to a boil.
- Add wontons and red bell pepper, cook for 5 minutes.
- Add spinach, fish sauce, and lime juice.
- Simmer for 2 more minutes.
- Serve hot, garnished with cilantro.
Notes
- Adjust spice level by adding more or less curry paste.
- Use vegetable broth for a vegetarian option.
- Store leftovers in the refrigerator for up to 3 days.
