- 2 tablespoons olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- Pat the rib roast dry with paper towels.
- Rub the olive oil all over the roast.
- In a bowl, mix salt, pepper, garlic, rosemary, and thyme.
- Apply the seasoning mixture evenly on the roast.
- Place the roast in a roasting pan, bone side down.
- Roast for 15 minutes at 450°F (232°C).
- Reduce the temperature to 325°F (163°C) and continue roasting for 1.5 to 2 hours, until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove from the oven and let it rest for 20-30 minutes before carving.
