Instructions
- Preheat your oven to 450°F (232°C).
- Pat the roast dry with paper towels.
- Rub olive oil all over the roast.
- Season generously with salt, pepper, garlic powder, and rosemary.
- Place the roast bone-side down in a roasting pan.
- Roast for 20 minutes.
- Reduce the temperature to 325°F (163°C) and continue roasting until the desired internal temperature is reached (130°F for medium-rare).
- Remove from oven and let rest for 15-20 minutes before carving.
