A creamy cheesecake with strawberry and pistachio flavors.

- 1 1/2 cups crushed graham crackers
- 1/2 cup melted butter
- 2 cups cream cheese
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped fresh strawberries
- 1/2 cup chopped pistachios
- 1/4 cup sour cream
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix crushed graham crackers with melted butter.
- Press the mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one by one, mixing well after each addition.
- Stir in vanilla extract, strawberries, pistachios, sour cream, and heavy cream.
- Pour the mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set.
- Let it cool before refrigerating for at least 4 hours.
- Serve chilled.
Notes
- For a smoother texture, blend the strawberries before adding them.
- Chill the cheesecake overnight for best results.
- Top with whipped cream if desired.
