Description
Delicious strawberry rhubarb crumb bars with a buttery crust and crumb topping.
Ingrédients

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup oats
- 2 cups chopped strawberries
- 1 cup chopped rhubarb
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, sugar, and salt.
- Add softened butter and oats. Mix until crumbly.
- Press half of the mixture into a greased baking dish.
- In another bowl, combine strawberries, rhubarb, cornstarch, and vanilla.
- Spread the fruit mixture over the crust.
- Top with the remaining crumb mixture.
- Bake for 30-35 minutes.
- Let cool before cutting into bars.
Notes
- Store bars in an airtight container.
- Best served chilled.
- Substitute other fruits if desired.
