- 2 Cornish game hens
- 1 cup cooked rice
- 1/2 cup diced celery
- 1/2 cup diced onion
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté celery and onion until soft.
- In a bowl, combine rice, sautéed vegetables, cranberries, pecans, salt, pepper, thyme, and garlic powder.
- Stuff each Cornish game hen with the rice mixture.
- Place hens in a roasting pan and pour chicken broth over them.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes until golden brown.
- Let rest for 10 minutes before serving.
