- 2 medium delicata squashes
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the delicata squashes in half lengthwise and scoop out the seeds.
- Place the squashes cut side up on a baking sheet.
- In a bowl, mix quinoa, black beans, corn, cumin, chili powder, salt, and pepper.
- Fill each squash half with the mixture.
- If using, sprinkle cheese on top.
- Bake for 25-30 minutes until the squash is tender.
