- 2 cups summer squash, sliced
- 1 cup onion, chopped
- 1 cup cheddar cheese, shredded
- 1 cup sour cream
- 1 can cream of mushroom soup
- 1 cup Ritz crackers, crushed
- 2 tablespoons butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the summer squash, onion, cheddar cheese, sour cream, and cream of mushroom soup.
- Mix well and transfer to a greased baking dish.
- In a separate bowl, mix the crushed Ritz crackers with melted butter.
- Spread the cracker mixture evenly over the squash mixture.
- Bake for 30-35 minutes or until the top is golden brown.
Notes
- Use fresh squash for the best flavor.
- Feel free to add other vegetables.
- This casserole can be made ahead and refrigerated before baking.
