A simple and flavorful dish made with swamp potatoes in a crockpot.
Ingrédients

- 2 pounds swamp potatoes, peeled and cubed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Prepare the swamp potatoes by peeling and cubing them.
- Dice the onion and mince the garlic.
- In a crockpot, combine swamp potatoes, onion, garlic, and vegetable broth.
- Add thyme, salt, pepper, and olive oil.
- Stir the mixture to combine well.
- Cover and cook on low for 6-8 hours or until potatoes are tender.
- Serve warm.
Notes
- Adjust seasoning to taste.
- Can add other vegetables if desired.
- Leftovers can be stored in the fridge for up to 3 days.
