  • 1 can black beans, drained and rinsed
  • 1 avocado
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, cumin, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a blender, combine avocado, lime juice, salt, and pepper. Blend until smooth.
  5. In a bowl, combine roasted sweet potatoes and black beans.
  6. Drizzle with avocado lime dressing and mix well.
  7. Garnish with fresh cilantro before serving.
