Instructions
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, cumin, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In a blender, combine avocado, lime juice, salt, and pepper. Blend until smooth.
- In a bowl, combine roasted sweet potatoes and black beans.
- Drizzle with avocado lime dressing and mix well.
- Garnish with fresh cilantro before serving.
