- 2 medium sweet potatoes, peeled and cubed
- 1 can black beans, drained and rinsed
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt to taste
- 4 large flour tortillas
- 1 cup shredded cheese
- Olive oil for cooking
Instructions
- Boil sweet potatoes in salted water until tender.
- Drain and mash the sweet potatoes.
- Add black beans, chili powder, cumin, and salt. Mix well.
- Heat a skillet over medium heat and add a little olive oil.
- Place a tortilla in the skillet and spread the sweet potato mixture on half of it.
- Sprinkle cheese over the mixture and fold the tortilla.
- Cook until golden brown on both sides, about 3-4 minutes per side.
- Repeat with remaining tortillas and filling.
- Slice and serve warm.
