- 2 cups cooked brown rice

Instructions
- Preheat your oven to 400°F (200°C).
- Spread the diced sweet potatoes on a baking sheet.
- Drizzle with olive oil, chili powder, cumin, salt, and pepper.
- Toss to coat and roast for 25-30 minutes until tender.
- In a bowl, layer cooked brown rice, roasted sweet potatoes, black beans, corn, and bell pepper.
- Top with avocado slices and fresh cilantro.
