A delicious sweet potato cinnamon roll cake that combines the flavors of sweet potatoes and cinnamon in a moist cake.

- 2 cups mashed sweet potatoes
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract

- 1 teaspoon baking powder

- 1/2 cup brown sugar

Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix mashed sweet potatoes, sugar, and butter until smooth.
- Add eggs and vanilla extract; mix well.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to the sweet potato mixture; mix until just combined.
- Spread half of the batter into a greased baking dish.
- In a small bowl, combine brown sugar and cinnamon; sprinkle over the batter.
- Top with remaining batter and swirl with a knife.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before frosting.
- For frosting, mix powdered sugar and milk until smooth; drizzle over the cooled cake.
Notes
- Make sure the sweet potatoes are well-mashed for a smooth batter.
- Store leftovers in an airtight container.
- You can add nuts for extra crunch.
