Description
Tapioca pudding is a creamy dessert made from tapioca pearls, milk, and sugar.

- 1/2 cup tapioca pearls
- 4 cups milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 eggs
Instructions
- Soak tapioca pearls in water for 30 minutes.
- In a saucepan, combine milk, sugar, and salt. Heat over medium heat until warm.
- Add soaked tapioca pearls to the pan and cook for 15 minutes, stirring frequently.
- In a bowl, whisk eggs. Gradually add some warm milk mixture to eggs to temper them.
- Pour egg mixture back into the saucepan, stirring constantly.
- Cook for an additional 10 minutes until thickened.
- Remove from heat and stir in vanilla extract.
- Let cool before serving.

- Adjust sugar according to taste.
- Serve warm or chilled.
