Tasty vegan chickpea nuggets are a healthy and delicious alternative to traditional chicken nuggets, packed with flavor and protein.

- 1 can chickpeas, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup nutritional yeast
- 1/4 cup chopped parsley
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mash the chickpeas with a fork until mostly smooth.
- Add breadcrumbs, nutritional yeast, parsley, garlic, onion powder, paprika, salt, and pepper.
- Mix well until combined.
- Form the mixture into nugget shapes.
- Place nuggets on a baking sheet lined with parchment paper.
- Drizzle with olive oil.
- Bake for 20-25 minutes, flipping halfway through, until golden brown.
Notes
- Serve with your favorite dipping sauce.
- Store leftovers in the refrigerator for up to 3 days.
