Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes until quinoa is fluffy.
- In a bowl, mix black beans, bell pepper, corn, avocado, lime juice, cumin, salt, and pepper.
- Add cooked quinoa to the mixture and stir well.
- Serve warm or chilled.
