Description

A delicious dish featuring rolled tortillas filled with beef and topped with a flavorful sauce.


Ingrédients

  • 1 pound ground beef
  • 1 cup onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 2 cups shredded cheese
  • 8 flour tortillas
  • 1 can enchilada sauce
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until browned.
  3. Add black beans, corn, cumin, chili powder, and salt. Stir well to combine.
  4. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with beef mixture and roll them up.
  6. Place rolled tortillas seam-side down in the baking dish.
  7. Pour remaining enchilada sauce over the tortillas.
  8. Sprinkle shredded cheese on top.
  9. Bake for 25 minutes or until cheese is melted and bubbly.

Notes

  • You can add more vegetables for extra nutrition.
  • Serve with sour cream and guacamole for added flavor.
  • Make it spicier by adding jalapeños.
