A flavorful and hearty Tex Mex sweet potato hash. Perfect for breakfast or brunch.
Ingrédients

- 2 medium sweet potatoes, diced
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 can black beans, drained and rinsed
- 2 large eggs (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes and cook until tender, about 10-15 minutes.
- Stir in bell peppers, onion, and garlic. Cook until softened.
- Add cumin, paprika, salt, and pepper. Mix well.
- Stir in black beans and cook until heated through.
- If using, create two wells and crack an egg into each. Cover and cook until eggs are set.
- Serve warm.

- Feel free to add other vegetables.
- Top with avocado or salsa for extra flavor.
