Description
Texas corn nuggets are a delicious snack made from sweet corn, coated in a crispy batter and deep-fried.

- 1 cup sweet corn
- 1/2 cup cornmeal
- 1/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup milk
- 1 large egg
- Oil for frying
Instructions
- In a bowl, mix sweet corn, cornmeal, flour, baking powder, salt, and pepper.
- In another bowl, whisk milk and egg together.
- Add the wet ingredients to the dry ingredients and stir until combined.
- Heat oil in a deep fryer or pot over medium heat.
- Drop spoonfuls of the mixture into the hot oil.
- Fry until golden brown, about 2-3 minutes.
- Remove and drain on paper towels.
- Serve warm.

- Adjust seasoning to taste.
- Can be served with dipping sauce.
- Store leftovers in an airtight container.
