- 1 cup butter

- 1 can coconut milk (13.5 oz)
- 2 tablespoons curry powder

- 1 teaspoon pepper
- 1 cup spinach
- 1 cup cooked rice
Instructions
- Heat the butter in a skillet over medium heat.
- Add onion, garlic, and ginger. Sauté until soft.
- Add diced chicken. Cook until browned.
- Stir in curry powder, salt, and pepper.
- Pour in coconut milk. Simmer for 10 minutes.
- Add spinach and cook until wilted.
- Serve over cooked rice.
