A flavorful and easy Thai peanut noodles recipe.
Ingrédients

- 8 oz rice noodles
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 tbsp lime juice
- 1 clove garlic, minced
- 1/4 tsp red pepper flakes
- 1/4 cup water
- 1 cup shredded carrots
- 1 bell pepper, sliced
- 1/4 cup chopped cilantro
- Chopped peanuts for garnish
Instructions
- Cook the rice noodles according to the package instructions.
- In a bowl, mix peanut butter, soy sauce, honey, lime juice, garlic, red pepper flakes, and water.
- Heat a pan over medium heat and add the cooked noodles.
- Pour the peanut sauce over the noodles and toss to coat.
- Add carrots and bell pepper, and stir-fry for 2-3 minutes.
- Remove from heat and stir in cilantro.
- Serve hot, garnished with chopped peanuts.
Notes
- Adjust the spiciness by adding more or less red pepper flakes.
- Use any vegetables you prefer.
- Store leftovers in the fridge for up to 3 days.
