  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/4 cup water
  • 1 cup shredded carrots
  • 1 bell pepper, sliced
  • 1/4 cup chopped cilantro
  • Chopped peanuts for garnish

Instructions

  1. Cook the rice noodles according to the package instructions.
  2. In a bowl, mix peanut butter, soy sauce, honey, lime juice, garlic, red pepper flakes, and water.
  3. Heat a pan over medium heat and add the cooked noodles.
  4. Pour the peanut sauce over the noodles and toss to coat.
  5. Add carrots and bell pepper, and stir-fry for 2-3 minutes.
  6. Remove from heat and stir in cilantro.
  7. Serve hot, garnished with chopped peanuts.

  • Adjust the spiciness by adding more or less red pepper flakes.
