  • 4 large eggs
  • 1 cup buttermilk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup pumpkin puree
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a bowl, cream together butter and sugar until fluffy.
  4. Add eggs one at a time, mixing well after each.
  5. Stir in buttermilk and vanilla extract.
  6. In another bowl, mix flour, baking powder, salt, cinnamon, and nutmeg.
  7. Gradually add dry ingredients to wet ingredients. Mix until just combined.
  8. Fold in pumpkin puree.
  9. Divide batter evenly between the prepared pans.
  10. Bake for 25-30 minutes or until a toothpick comes out clean.
  11. Let cakes cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
