  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 lemon, halved
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 1 onion, quartered

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken and pat it dry with paper towels.
  3. Rub olive oil all over the chicken.
  4. Season the chicken with salt, pepper, garlic powder, and paprika.
  5. Stuff the cavity with lemon halves, rosemary, thyme, and onion.
  6. Place the chicken in a roasting pan.
  7. Roast for 1 hour and 20 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 10 minutes before carving.
