Description
Delicious Thanksgiving cupcakes made with pumpkin and topped with cream cheese frosting.
Ingrédients

- 1 cup all-purpose flour
- 1/2 cup pumpkin puree
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 cup cream cheese (softened)
- 1/4 cup butter (softened)
- 2 cups powdered sugar
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk pumpkin puree, sugar, brown sugar, oil, eggs, and vanilla.
- Combine dry ingredients with wet ingredients.
- Fill cupcake liners 2/3 full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely.
- In a bowl, beat cream cheese and butter until smooth.
- Gradually add powdered sugar until smooth and fluffy.
- Frost cooled cupcakes with cream cheese frosting.
Notes
- Store cupcakes in an airtight container.
- Top with chopped nuts for extra flavor.
