Description

Delicious Thanksgiving cupcakes made with pumpkin and topped with cream cheese frosting.


Ingrédients

  • 1 cup all-purpose flour
  • 1/2 cup pumpkin puree
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup cream cheese (softened)
  • 1/4 cup butter (softened)
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk pumpkin puree, sugar, brown sugar, oil, eggs, and vanilla.
  4. Combine dry ingredients with wet ingredients.
  5. Fill cupcake liners 2/3 full with batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool completely.
  8. In a bowl, beat cream cheese and butter until smooth.
  9. Gradually add powdered sugar until smooth and fluffy.
  10. Frost cooled cupcakes with cream cheese frosting.
