Description
Delicious Thanksgiving cheesecake with a creamy filling and a graham cracker crust.
Ingrédients

- 1 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 4 packages (8 ounces each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/2 cup pumpkin puree
- 1 teaspoon pumpkin spice
Instructions
- Preheat oven to 325°F (160°C).
- Mix graham cracker crumbs, 1/2 cup sugar, and melted butter.
- Press mixture into the bottom of a 9-inch springform pan.
- In a bowl, beat cream cheese and 1 cup sugar until smooth.
- Add vanilla extract and mix well.
- Add eggs one at a time, mixing after each addition.
- Stir in sour cream, pumpkin puree, and pumpkin spice.
- Pour filling over the crust in the springform pan.
- Bake for 55-60 minutes until set.
- Cool and refrigerate for at least 4 hours before serving.
Notes
- Serve with whipped cream on top.
- Store leftovers in the refrigerator.
- Can be made a day in advance.
