Description

Ingrédients

  • 1 whole duck (45 pounds)
  • 2 oranges, quartered
  • 4 garlic cloves, crushed
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Remove the giblets from the duck and pat it dry.
  3. Season the duck inside and out with salt, pepper, and thyme.
  4. Stuff the cavity with orange quarters and garlic.
  5. Place the duck breast-side up on a roasting rack in a roasting pan.
  6. Pour chicken broth into the bottom of the pan.
  7. Roast the duck for about 2 hours, or until the internal temperature reaches 165°F (74°C).
  8. Let the duck rest for 15 minutes before carving.
