  • 200g powdered sugar
  • 150g egg whites
  • 50g granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice
  • 100g butter
  • 200g cream cheese
  • 100g powdered sugar (for filling)

Instructions

  1. Preheat your oven to 150°C (300°F).
  2. Mix almond flour and powdered sugar in a bowl.
  3. Whisk egg whites until frothy, then gradually add granulated sugar until stiff peaks form.
  4. Fold the dry ingredients into the egg whites gently.
  5. Transfer the mixture to a piping bag and pipe circles onto a baking sheet.
  6. Let them sit for 30 minutes until a skin forms.
  7. Bake for 15-20 minutes and let cool completely.
  8. For the filling, beat butter and cream cheese until smooth, then add powdered sugar and pumpkin spice.
  9. Fill half the macarons with the filling and top with the other half.
