- 1 whole turkey (12–14 lbs)
- 1/2 cup unsalted butter, softened
- 2 tablespoons salt
- 1 tablespoon black pepper
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 4 cups chicken broth
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, mix butter, salt, pepper, rosemary, and thyme.
- Rub the mixture all over the turkey.
- Place turkey in a roasting pan. Stuff the cavity with onion, carrots, and celery.
- Pour chicken broth into the pan.
- Cover the turkey with foil.
- Roast for about 2.5 to 3 hours, removing the foil in the last hour for browning.
- Check the internal temperature reaches 165°F (75°C).
- Let the turkey rest for 20 minutes before carving.
