Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced butternut squash with olive oil, salt, and pepper.
- Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
- While the squash is roasting, cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, roasted squash, cranberries, and pecans.
- Toss gently to mix all ingredients.
- Garnish with fresh herbs before serving.

- Feel free to add other vegetables.
- This dish can be served warm or at room temperature.
