- 2 cups all-purpose flour
- 1 cup unsalted butter, chilled and diced
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup ice water
- 2 cups pumpkin puree
- 1 cup heavy cream
- 1 cup brown sugar
- 3 large eggs
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix flour, sugar, and salt.
- Add butter and mix until crumbly.
- Stir in ice water until dough forms.
- Roll out the dough and fit it into a pie pan.
- In another bowl, whisk together pumpkin, cream, brown sugar, eggs, and spices.
- Pour the filling into the pie crust.
- Bake for 15 minutes, then reduce temperature to 350°F (175°C) and bake for 40 minutes.
- Let cool before serving.
Notes
- Use fresh pumpkin for best flavor.
- Chill the pie crust for easier handling.
- Serve with whipped cream for extra sweetness.
