- 2 cups of green beans
- 1 cup of diced potatoes
- 1 cup of cranberry sauce
- 1/2 cup of chopped walnuts
- 3 tablespoons of olive oil
- 2 teaspoons of salt
- 1 teaspoon of black pepper
- 1/2 teaspoon of garlic powder
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and trim the green beans.
- Dice the potatoes into small cubes.
- In a bowl, mix the green beans, potatoes, olive oil, salt, pepper, and garlic powder.
- Spread the mixture on a baking sheet.
- Bake for 25-30 minutes or until vegetables are tender.
- In the last 5 minutes, sprinkle chopped walnuts on top.
- Serve warm with cranberry sauce on the side.
Notes
- Adjust seasoning to taste.
- Can substitute walnuts with pecans.
- Vegetables can be prepped a day in advance.
