- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk
- 1 teaspoon baking powder

- 1 cup pumpkin puree
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 cup cream cheese frosting
- Autumn-themed sprinkles
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together butter and sugar until light.
- Add eggs one at a time, mixing well after each.
- Stir in vanilla and pumpkin puree.
- In another bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually add dry ingredients to the wet mixture, alternating with milk.
- Fill cupcake liners 2/3 full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool completely before frosting.
- Decorate with cream cheese frosting and sprinkles.
Notes
- Store cupcakes in an airtight container.
- Use different flavors of frosting for variety.
- Can add nuts or chocolate chips to the batter for extra texture.
