Instructions

  1. Preheat your oven to 375°F.
  2. Season the chicken and pork with garlic powder, onion powder, salt, and pepper.
  3. Heat olive oil in a skillet and sear the chicken and pork until browned.
  4. Transfer the meat to a baking dish and bake for 25-30 minutes.
  5. In a pot, bring vegetable broth to a boil.
  6. Add quinoa and mixed vegetables to the broth.
  7. Reduce heat and simmer until quinoa is cooked, about 15 minutes.
  8. Serve the baked meat alongside the quinoa and vegetables.
