Ingrédients

- 2 lbs of chicken breast
- 1 lb of pork tenderloin
- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of mixed vegetables (carrots, peas, corn)
- 2 tbsp of olive oil
- 1 tsp of garlic powder
- 1 tsp of onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F.
- Season the chicken and pork with garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a skillet and sear the chicken and pork until browned.
- Transfer the meat to a baking dish and bake for 25-30 minutes.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and mixed vegetables to the broth.
- Reduce heat and simmer until quinoa is cooked, about 15 minutes.
- Serve the baked meat alongside the quinoa and vegetables.
Notes
- You can substitute chicken with tofu for a vegan option.
- Use any seasonal vegetables you prefer.
- Adjust spices according to taste.
