- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup cranberries
- 1/2 cup pecans, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt to taste
- Pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes or until liquid is absorbed.
- In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add cranberries, pecans, thyme, rosemary, salt, and pepper. Cook for 5 minutes.
- Combine the quinoa with the sautéed mixture. Stir well.
- Serve warm and enjoy.
