A delicious vegetarian main dish perfect for Thanksgiving.
Ingrédients

- 2 cups quinoa
- 4 cups vegetable broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onions
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 2 teaspoons cumin
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low.
- Cover and simmer for 15 minutes.
- In a pan, heat olive oil over medium heat.
- Add carrots, celery, and onions; sauté until tender.
- Stir in black beans, corn, cumin, paprika, salt, and pepper.
- Combine vegetable mixture with cooked quinoa.
- Serve warm, garnished with parsley.
Notes
- Can substitute quinoa with rice or couscous.
- Adjust spices to your taste.
- Can be made a day in advance and reheated.
