Ingrédients

  • 4 cups vegetable broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring vegetable broth to a boil.
  3. Add quinoa and reduce heat to low.
  4. Cover and simmer for 15 minutes.
  5. In a pan, heat olive oil over medium heat.
  6. Add carrots, celery, and onions; sauté until tender.
  7. Stir in black beans, corn, cumin, paprika, salt, and pepper.
  8. Combine vegetable mixture with cooked quinoa.
  9. Serve warm, garnished with parsley.

  • Can substitute quinoa with rice or couscous.
  • Adjust spices to your taste.
