Description
A delicious vegetarian dish perfect for Thanksgiving.
Ingrédients

- 2 cups of quinoa
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup of corn
- 1 can of black beans, drained and rinsed
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and 4 cups of water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until translucent.
- Add bell pepper and zucchini, cook for 5 minutes.
- Stir in corn, black beans, cumin, salt, and pepper. Cook for another 5 minutes.
- Fluff cooked quinoa and mix with the vegetable mixture.
- Garnish with fresh cilantro before serving.
Notes
- Check quinoa for doneness before removing from heat.
- Feel free to add other vegetables as desired.
- This dish can be made ahead of time and reheated.
