Ingrédients

  • 2 cups of quinoa
  • 1 tablespoon of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup of corn
  • 1 can of black beans, drained and rinsed
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and 4 cups of water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, heat olive oil over medium heat.
  5. Add onion and garlic, sauté until translucent.
  6. Add bell pepper and zucchini, cook for 5 minutes.
  7. Stir in corn, black beans, cumin, salt, and pepper. Cook for another 5 minutes.
  8. Fluff cooked quinoa and mix with the vegetable mixture.
  9. Garnish with fresh cilantro before serving.

Notes

  • Check quinoa for doneness before removing from heat.
  • Feel free to add other vegetables as desired.
  • This dish can be made ahead of time and reheated.
