- 3 carrots, sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp balsamic vinegar
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
Instructions
- Preheat the oven to 400°F (200°C).
- Toss Brussels sprouts, green beans, and carrots in olive oil, salt, and pepper.
- Spread the vegetables on a baking sheet.
- Roast for 25-30 minutes until tender.
- Drizzle with balsamic vinegar.
- Sprinkle walnuts and cranberries on top.
- Serve warm.
