Instructions
- Preheat your oven to 350°F (175°C).
- Boil sweet potatoes in a pot until tender, about 15 minutes.
- Drain and mash the sweet potatoes in a large bowl.
- Add brown sugar, melted butter, and vanilla extract to the mashed sweet potatoes and mix well.
- Transfer the mixture to a baking dish.
- Top with mini marshmallows.
- Bake for 25 minutes or until marshmallows are golden brown.
